Each rack is a flat perforated plate standing on three legs. Pour water into a pot, wok or deep pan, set the rack inside and place food directly on it or on a heatproof plate, then cover to steam. The three sizes fit different pans, and the legs keep food clear of the water. The racks also work as raised stands for cooling or warming dishes.
